Passion Fruit Ice Cream

Passion Fruit Ice Cream
Ingredients: 
500ml cream
400g can of coconut milk
4 egg yolks
125ml castor sugar
pulp from 6 granadillas

Makes 1 litre 

Combine the cream and coconut milk and bring to the boil.
Beat together the eggs and sugar. 
Pour the hot mixture on to the eggs while beating constantly.
Return the mixture to the pan and stir over a low heat until the mixture coats the back of a wooden spoon and begins to thicken.
Allow to cool slightly before stirring in the granadillas. 
Either churn the mixture in an electric ice-cream machine or pour the mixture into a metal container and freeze until solid. 
Spoon the frozen mixture into a food processor and process until smooth.
Return to the metal container and freeze again until solid.
