Margarita Sorbet

Margarita Sorbet
Ingredients: 
500ml water
250ml sugar
160ml fresh lime juice
5ml grated lime rind
30ml triple sec liqueur
60ml tequila
Makes 625ml 
 
Combine the water and sugar in a saucepan over medium heat. 
Stir until the sugar dissolves.
Bring to the boil and boil for 2 minutes. 
 
Remove from the heat and add the lime juice, rind, triple sec and tequila.
Chill the mixture well. 
 
Either churn the mixture in an ice-cream machine or pour the mixture into a metal container and freeze until semi frozen. 
Stir well to break down the ice crystals and re-freeze. 
 
Repeat this process once more before finally freezing until solid.
