Christmas Cake
Line the base and sides of a 23cm cake pan with a triple layer of non-stick baking paper.
Put the cake fruit into a bowl, pour over the brandy, cover and leave overnight.

Next day add the cherries and glacé fruit to the mixture.
Cream the butter and sugar until fluffy.
Add the eggs, beating well after each addition.

Sift the flour, baking powder and spice.
Mix this into the creamed mixture.

Fold in the soaked fruit and nuts.
Spoon into prepared cake pan.
Wrap the outside of the cake pan in a double layer of newspaper secured with string.
Bake at 160°C for 2-3 hours depending on the size of your pans.
I used 3x12cm cake pans for this mixture.

Wrapping the cake pan in newspaper provides insulation for the cake as it is in the oven for so long and prevents it from drying out too quickly.
