Chocolate Ice Cream

Chocolate Ice Cream
Ingredients: 
500ml cream
45ml dark cocoa powder
200g dark chocolate, chopped
250ml milk
180ml sugar
5 egg yolks, beaten
5ml vanilla extract
Makes 1 litre 
 
Put the cream and the cocoa into a saucepan and heat gently.
When well combined, remove from the heat and stir in the chocolate.
Stir until smooth.
Set aside. 
 
Combine the milk and sugar in another saucepan and bring to the boil.
Pour this over the egg yolks while beating constantly.
Add vanilla.

Return the mixture to the saucepan and stir over a low heat until the mixture coats the back of a wooden spoon and thickens.
Add this to the chocolate mixture. 
 

Cool the mixture in the fridge, then churn in an electric ice-cream machine or place in a suitable container and freeze.
