Brown Rice and Chickpea Salad
Ingredients: 
375ml brown basmati rice
400g can of chickpeas, drained and rinsed
2 carrots, peeled and cut into julienne strips
125g sugar snap peas, halved diagonally
125g baby corn, halved diagonally
50ml soy sauce
30ml lemon juice
5ml chopped garlic
10ml grated ginger
60ml chopped parsley
30ml chopped mint
salt and pepper

Serves 4-6

Cook the rice according to directions.
Cool completely.
Stir in chickpeas, carrots, sugar snap peas and corn and toss well.
Combine the soy sauce, lemon juice, garlic and ginger and mix well.
Pour over the salad and mix well.
Stir in chopped herbs and season to taste.
